I have a friend applying for LLB this year and got CUHK LLB offer in January. She applied in early round.

In short, HKU is relatively slow in processing applications compared with CUHK or HKUST and HKU’s conditional offer is higher than the other two for the same subject.
The choice doesn’t matter a lot but if it is not the first choice in your application, you won’t receive offer in first round. You should target at April or beyond to receive news from HKU.
Even if you have received an interview, HKU may process it for a month or so for a decision. The first round offer should be released in Feb. If you are not in that round, you will be processed in later rounds as long as there are available seats. So, not putting in first choice for degrees with small class (20-30 seats), it is definitely not possible to get an offer as they may only give a few offers for non-JUPAS.
